Cooking at The Crib With Professional Runner Soufiane Bouchikhi

The Cooking at The Crib series continues with professional runner Soufiane Bouchikhi. Soufiane trained in Mammoth Lakes leading up to the Payton Jordan Invitational.

During his recent stay at The Crib, Soufiane made a guest appearance on Cooking at The Crib to make one of his go-to in-training dishes—a yellow curry and veggie omelet.

Soufiane Bouchikhi’s Go-To Recipe for Endurance Training

Ingredients:

  • eggs
  • onions
  • mushrooms
  • tomatoes
  • spinach
  • yellow curry
  • salt and pepper to taste

Directions:

  1. Chop onions and tomatoes.
  2. Sautee onions and mushrooms in a pan.
  3. Once the onions are browned, add the tomatoes.
  4. Mix curry, eggs, salt and pepper.
  5. Add eggs to the pan.
  6. When eggs are partially cooked, add spinach to the pan.
  7. Cook until eggs are firm and serve.
