Cooking at the Crib with Professional Cyclist Leah Thomas

The Cooking at The Crib series continues with professional cyclist Leah Thomas. Leah trained in Mammoth Lakes leading up to the Pan American Games in Mexico.

During her stay at The Crib, Leah made a guest appearance on Cooking at The Crib to make one of her go-to in-training dishes—couscous with pistachios and apricots.

LEAH THOMAS’ GO-TO RECIPE FOR ENDURANCE TRAINING

Ingredients:

  • 1/2 cup chopped red onion
  • 1/4 cup lemon juice
  • 1 10-ounce box of couscous
  • 2 tbsp. olive oil
  • 1 tsp. salt
  • 1/2 cup shelled raw pistachios
  • 10 dried apricots, chopped
  • 1/3 cup chopped parsley

Directions:

  1. Chop onion and soak in lemon juice.

  2. Boil water for couscous. Add salt and 1 tbsp. of olive oil before adding dried couscous. Cook using the directions on the packaging.

  3. Toast the pistachios on medium-high heat until lightly browned.

  4. Combine ingredients to make the dish. Drizzle remaining olive oil and add salt to taste.

  5. Serve warm or at room temperature.
