Cooking at The Crib With Professional Cyclist Katie Hall

We’re kicking off the Cooking at The Crib series with professional cyclist Katie Hall. Katie has trained in Mammoth Lakes leading up to a number of important races, including the Amgen Tour of California.

During her most recent stay at The Crib, Katie made a guest appearance on Cooking at The Crib to make one of her go-to in-training dishes—broiled salmon with rice and sauteed kale.

Katie Hall’s Go-To Recipe for Endurance Training

Ingredients:

  • salmon filet
  • 1 serving of kale
  • 1 shallot
  • 1 cup of rice
  • 1 tbsp. of butter
  • salt to taste

Directions:

  1. Set oven temperature to broil.
  2. Lightly salt the salmon filet and place on a baking sheet.
  3. Bring 1.5 cups of water to a boil and add rice, simmer until cooked (about 10 minutes).
  4. Once the oven is pre-heated, place the baking sheet in the oven and broil salmon for about 10 minutes.
  5. Chop shallots and de-vein kale.
  6. Saute shallots.
  7. Once the shallots are browned, add kale to the pan and saute until cooked.
  8. Plate salmon, rice and kale, adding butter and salt to taste.
